Gujing Roast Goose(古井烧鹅) in Gujing Town, Xinhui District, is a famous Cantonese dish with over 700 years of history. Legend has it that it was prepared using a secret recipe from the Southern Song Dynasty imperial court. It belongs to the Cantonese cuisine tradition. This dish is renowned both domestically and internationally, renowned for its crispy skin, juicy texture, and fragrant, sweet meat, making it a beloved favorite. It's said to be made using a secret recipe from the Southern Song Dynasty imperial court. Compared to Guangzhou roast goose, Gujing Roast Goose boasts a thinner, golden-brown, crispy skin with a subtle lychee wood aroma. Its distinctive sweetness and fragrance are the hallmarks of Gujing Roast Goose, with the sweetness derived from honey and its unique marinade. Furthermore, its aroma is the result of both the smoked lychee wood and the use of dried tangerine peel, a Xinhui specialty, in the marinade. The resulting roast goose is tender, juicy, and fragrant, leaving a lingering aftertaste.

Gujing Roast Goose has become a famous specialty of Jiangmen. It was included in the Jiangmen Municipal Intangible Cultural Heritage List in 2009 and in the eighth batch of Guangdong Provincial Intangible Cultural Heritage Representative Project List in 2022.
