The "Ten Famous Dishes of Jiangxi Cuisine" are Ningdu Three-Cup Chicken, Lotus Blood Duck, Four Stars Gazing at the Moon, Yugan Chili Fried Pork, Jinggang Smoked Bamboo Shoots, White-Braised Male Fish Head, Mandarin Fish Stew with Rice Noodles, Turtle Rice Noodles, Stir-fried Preserved Pork with Artemisia, and Nourishing Taihe Black-boned Chicken.

Ningdu Three-Cup Chicken: Ningdu County is known as the "Ancestral Home of Hakka People, Granary of Southern Jiangxi, and Source of the Gan River." The unique culinary culture of Ganzhou people has a profound influence on the area, continuously evolving and being passed down.

Lotus Blood Duck: Lotus Blood Duck is a traditional famous dish from Pingxiang, with a history of over 800 years. Legend has it that when Wen Tianxiang led his army through Lotus, the cooks mistakenly poured duck blood into the pot instead of chili sauce. After eating it, the soldiers' morale soared, and "Lotus Blood Duck" became famous. The precise blend of rice wine and duck blood, the perfect fusion of duck meat and blood, the aroma and flavor enhanced by tea oil and chili, and the small pieces of Lotus Blood Duck fully absorbing the essence of every drop of broth—all these elements combine to create this delicacy.

"Four Stars Gazing at the Moon" is a famous dish from Xingguo County, Ganzhou, known as the "County of Generals." The main dish is steamed fish in a bamboo steamer, symbolizing family reunion and abundant blessings.

Homemade chili sauce is mixed with rice flour and fish slices, allowing them to fully meld. The mixture is then steamed in a bamboo steamer lined with bamboo leaves.

Upon lifting the lid, steaming hot air releases a fragrant, spicy, and savory aroma. The fish is tender and flavorful, with rich layers of taste. The rice flour, infused with the fragrance of bamboo leaves, is smooth and chewy. Served with four side dishes, it is mouthwatering and whets the appetite.

After tasting this dish, Mao Zedong remarked, "Look at this steamer, it's like the moon, and the four stir-fried dishes are like stars. Let's call it 'Four Stars Gazing at the Moon.'" Thus, the dish got its name.

Jinggang Smoked Bamboo Shoots: The 800-li (approximately 400 km) Jinggang Mountains are renowned for their beautiful scenery and lush forests, earning them the title of "Green Treasure Trove." The pristine environment nurtures delicious mountain delicacies, with the Jinggang smoked bamboo shoots, hailed as "sea cucumbers of the bamboo forest," being the most representative.

Nourishing Taihe Black-boned Chicken: Chinese dietary therapy and medicinal cuisine have a long history, standing out uniquely in the world's culinary culture. As its name suggests, the nourishing Taihe Black-boned Chicken is a health-promoting delicacy, a gift from nature, and a flavor bestowed by time.

The mountains and waters of Taihe, near Jinggang Mountain, nurture the tender-fleshed, uniquely shaped black-boned chicken, whose medicinal properties are recorded in Li Shizhen's *Compendium of Materia Medica*.

During the Qianlong era of the Qing Dynasty, the Taihe Black-boned Chicken, with its outstanding appearance, tender meat, and unique aroma, was considered a rare delicacy and was designated as "tribute chicken" to the imperial court. From then on, the Taihe Black-boned Chicken became widely renowned.

Taihe Black Chicken, a nourishing dish, is made by steaming black chicken, goji berries, codonopsis, red dates, and other ingredients for 3 hours.
