Baoding Cuisine


The special foods of Baoding City include donkey meat hot bread, Bai Yunzhang steamed buns, braised chicken, Gaoyang pot pork elbow, beef covered pancakes, Gaobeidian shredded tofu, Baoding noodle sauce (one of the three treasures of Baoding), Huaimao pickles, Chunbulao (one of the three treasures of Baoding), etc.

Donkey meat hot buns are a traditional snack consisting of cooked donkey meat sandwiched between hot buns. Originating in Caohe Town, Xushui District, Baoding City, this dish is widely popular throughout Baoding and even North China. The donkey meat used as its main ingredient is high in protein and amino acids, yet low in fat and cholesterol.

Beef-covered pancakes are a Baoding specialty, a Hebei cuisine dish that originated during the Qing Dynasty. Beef is rich in protein, which can boost the body's resistance to disease.

Bai Yunzhang Baozi Shop is a time-honored Chinese brand, founded in 1919 by chef Bai Yunzhang. In 1958, Bai Yunzhang's buns, along with Tianjin's "Gubuli" buns, won first place in a nationwide bun quality competition among large and medium-sized cities. Bai Yunzhang's buns are also halal, making them suitable for a wider audience. Their characteristic texture is their thin, chewy skin and fragrant meat filling.
